Mediterranean Sweet Pepper Carrot Salad
Try this Mediterranean Sweet Pepper Carrot Salad Recipe for a refreshing savory salad enhanced with a lemony dressing. This colorful salad is vegan and gluten free. It is great as an appetizer and pairs well with many dishes. For dinner, lunch or brunch, from everyday meals to special occasions – this easy salad is a true winner.
Equipment
- Food Processor (use coarse grater disc)
- Grater (if you opt to grate manually)
- Fine Hole Grater (for grating the lemon rind)
- Big Bowl (for mixing the salad)
- Small Bowl (for mixing the dressing)
Ingredients
Salad Base
- 6 cups Carrots (approximately 8 carrots, peeled and grated)
- 2 cups Long Sweet Peppers (approximately 2 peppers, measured after cutting into thin circles)
- 1 ½ cups Fresh Parsley Leaves (leaves measured after removed from stem)
Dressing
- 4 tablespoons Olive Oil
- ½ cup Fresh Lemon Juice
- 1 tablespoon Fresh Lemon Rind
- 4 teaspoons Minced Garlic Cloves
- 1 teaspoon Salt (adjust to taste and health requirements)
- ¼ teaspoon Ground Black Pepper
Instructions
Prepare The Salad Base
- Gather the ingredients for making the salad base.

- Peel and rinse the carrots.
- Grate the carrots coarsely, by hand or in a food processor, using a coarse grating disk.
- Place the grated carrots into a large bowl.

- Wash the long sweet peppers. Thinly slice them into circles.

- Remove and rinse the seeds away from the pepper circles. Drain well and add them to the carrots.
- Wash the parsley well and remove the leaves from the stems. Measure 1 ½ cups.
- Thinly dice the leaves. Tip: It helps to bunch up the leaves and to then proceed to dice.

- Add the diced parsley leaves to the carrots and sweet peppers.
Prepare The Dressing And Add To The Salad Base
- Gather the dressing ingredients.

- In a small bowl, mix the olive oil, lemon juice, lemon rind, minced garlic, salt and black pepper.
- Pour the dressing over the salad.

- Gently toss the salad until well mixed
