Mediterranean Roasted Carrots
Equipment
- 1 Large Baking Pan
- 3 Baking sheets
- Crinkle Cutter (you can use a regular knife as well)
- Large Heat-Resistant Dish (for mixing the carrots with the seasoning)
- Small Bowl (for mixing the seasoning)
Ingredients
- 5 cups Carrots (measured after cut into oval shaped pieces, approximately 8 carrots)
- Several Fresh Thyme Stalks With Leaves (washed well)
- 5 Garlic Cloves (peeled and washed)
- 1 tbsp Fresh Orange Rind (grate only the orange outer peel)
- 3 tbsp Olive Oil
- 1 tbsp Balsamic Vinegar (without added sugar or additives)
- 1 tsp Salt (adjust to taste and health requirements)
- 1/4 tsp Ground Black Pepper
Instructions
Preheat The Oven & Gather The Ingredients
- Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
- Gather the ingredients.
Prepare The Carrots And Bake (Initially Without Seasoning)
- Peel the carrots and cut off the ends of both sides. Rinse with water.
- Using a crinkle cutter, cut thin oval shapes.
- Measure 5 cups of cut carrots.
- Spread the cut carrots in a baking pan lined with a baking sheet.
- Cover the carrots with another baking sheet and bake for 30 minutes.
- After 30 minutes, place the baked carrots into a heat-resistant dish.
Prepare The Seasoning
- While the carrots bake, you can prepare the seasoning as explained below.
- Wash the thyme stalks and leaves well. Drain and set aside.
- Peel and wash the garlic cloves. Cut into thin oval shapes. The shape will mimic the carrot oval shape for an aesthetic look. Set aside.
- Prepare 1 tbsp fresh orange rind. Set Aside
- In a small bowl, mix the olive oil, balsamic vinegar, garlic cloves, orange rind, salt and ground black pepper.
Season The Carrots And Bake (For Additional 20 Minutes)
- Pour the mixed seasoning over the baked carrots (previously placed in a heat-resistant dish) and gently mix.
- Place a new baking sheet in the baking pan and spread the seasoned carrots in the pan. Spread the washed thyme stalks on the carrots.
- Bake for an additional 20 minutes or until the carrots are golden.
- Gently remove the thyme leaves from the stalks. Be mindful to remove all stalks.
- Mix the thyme leaves with the carrots and your dish is ready.
